I. BACKGROUND INFORMATION FOR TEACHERS
Students will learn about when sushi came to the US and how sushi has been adapted. Through a reading activity, students will also learn how the American style sushi, like ‘California rolls’, are being introduced in modern Japan. Then, students will learn about how to make California rolls. Finally, students will be engaged in a small project to plan a new sushi creation of their own.
Teacher Instructions -
Before class, prepare the handout and the transparency.

Review what kinds of innovative sushi were created in the US using Script 1.
-
Distribute Handout 1 to students. Discuss questions 1 and 2 using Transparency 1 with the entire class. Then, have students read the passage.

Have students form pairs and have them work on the questions. Discuss the answers with the entire class.

Distribute Handout 2 as a homework assignment to students and explain the activity using Transparency 2.

In the next class, discuss the answers and the questions from the handout with the entire class. Review the ingredients and the instructions to make California rolls. Plan a California roll party and make sushi together.

Show Transparency 3 and explain the activity. Have students form groups of three to work on the activity. Have each group present their imaginary sushi restaurant to the class.

すしは1970年ごろ、日本からアメリカに来ました。アメリカでは、生1の魚を食べる習慣2がなかったので、料理人3はアボカドなど、ほかの材料4を使ってすしを作るようになりました。また、黒い色ののりが苦手5というアメリカ人が多かったので、のり6が見えないようにのりを中に入れる「裏巻き7」も生まれました。このようにして、アボカドを使って裏巻きにした（ A ）が作られるようになりました。
